Chai rice pudding

  • 1 cup of white rice
  • 4 cups unsweetened almond milk
  • 3 tablespoons of honey or for vegan version palm honey or agave
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • ½ teaspoon cardamom powder
  • ½ teaspoon ground anise
  • ½ teaspoon of salt

To decorate:

  • Chopped pistachios to taste
  • Dehydrated roses to taste


  1. Insert the stainless steel bowl into the Instant Pot. Add all the ingredients to the Instant Pot bowl (except for decoration).
  2. Put on and lock the lid of the Instant Pot. Ensure that the steam release valve rotated to the “Sealed” ( Sealing ). Press the PRESSURE COOKING function , at the HIGH pressure level , and set the time to 10 MINUTES.
  3. When finished cooking, press CANCEL and turn the steam release valve to “ Venting ” . Once all pressure has been released, open the lid of the Instant Pot.
  4. Press the SKIP functionality , and set the time to 3 MINUTES. Cook stirring frequently until the preparation has the desired consistency.
  5. Optionally, serve decorated with chopped pistachios and ground rose petals.
